Buckwheat Pancakes

Ingredients

  • 1 cup of buckwheat
  • Black salt
  • A tablespoon of honey
  • Water and or 1/4 cup of soy milk
  • Dried fruit to top
  • Sliced seasonal fruit

Method

  1. Blend in the blender 1 cup of buckwheat groats until becomes a fine grain flour.
  2. Add a cup of water or soy milk, salt, honey, and blend again.
  3. Pour this mixture into a shallow dish - the size of a small plate and cook in the microwave for 6 minutes on high.
  4. Alternatively pan fry using a drop of sesame oil in pan for each pancake.
  5. When cool, then top with dried fruit and/or chopped fresh fruit, with a drizzle of honey for the breakfast option.

    Can also try these for lunch with your favourite veggies.
