Ingredients
- 1 cup of glutenous, sticky rice flour (can grind up the glutenous rice if it's hard to find the flour - blend in blender well until it becomes fine powder)
- 1 cup of water
- 1/4 cup sugar
- pinch of salt
Peanut coconut paste (moochi filling)
- 1 cup of peanuts
- 1/2 cup of coconut
- 1/4 cup of sugar or honey
Blend these three ingredients into a filling for the moochi. It should be crumbly but not too dry. It should stick together in a little ball.
Method
- Slowly stir water into the flour in a large bowl and mix the flour gently until it absorbs the water
- Add the sugar and stir into a batter
- Mix together well, add pinch of salt and mix again
- Pour into a china or glass bowl and put this in the microwave for 30 seconds (cover first)
- Remove and stir again, the mixture should be getting thicker now
- Repeat and microwave for another 30 seconds
- mix well, it should now be very sticky like bread dough, let it cool for 30 minutes
- Put around 1/3 cup of tapioca flour on the chopping board or clean surface used to make the moochi
- Scoop out the mochi mix when cool and knead it well like you're making bread
- Using a cutting card of knife then cut into peanut ball sized blobs of mochi dough
- Use plenty of tapioca flour and shape the balls into flat dough circles about 1/2 cm thick
- Add in the peanut coconut paste, about 1 teaspoon and roll into mochi balls
Note: If you don't have a microwave (as we don't) we use a different method of cooking by steaming the rice mix inside a bowl which is in water in a pressure cooker. Use the brown rice setting to cook or cook for 40 minutes on medium heat then remove from heat and wait for the sticky rice to cool before shaping it into moochis
