Peanut, potato fritters

Ingredients

  • 1 cup of roasted peanuts
  • 2 large potatoes cut into small slices
  • black salt (to taste)
  • 1 tsp curry powder
  • 2 teaspoons of garlic powder or crushed garlic
  • water (enough to blend into a pancake consistency mix)

Method

  1. In the blender or food processor add all ingredients
  2. Blend until you have a pancake consistency batter
  3. In a non-stick (safe teflon pan) or use 1 tsp olive or sesame oil in a regular pan, heat the pan to a high heat
  4. Pour in the mixture to make a pikelet or fritter size. (Can usually get 4 onto a large pan at one time)
  5. When they are golden brown then flip them to cook on the other side
  6. Eat while hot!
