Lemon Cake
Ingredients
- 1 teasppon of baking powder or 1 heaped teaspoon of yeast mixed in two teasoons of warm water
- pinch of salt
- 1 cup of buckwheat flour
- juice of one lemon
- zest of one lemon
- 1/2 cup of coconut cream
- 1/2 cup jaggery sugar
Method
- Mix together the dry ingredients
- Mix together the wet ingredients
- Combine both and mix well (the mix should be like a bread but quite a bit softer, add 1/4 cup of water to make it a softer mix
- place into a small bread tin and place into the oven on 180degrees for 25 minutes
