Lemon Cake

Ingredients

  • 1 teasppon of baking powder or 1 heaped teaspoon of yeast mixed in two teasoons of warm water
  • pinch of salt
  • 1 cup of buckwheat flour
  • juice of one lemon
  • zest of one lemon
  • 1/2 cup of coconut cream
  • 1/2 cup jaggery sugar

Method

  1. Mix together the dry ingredients
  2. Mix together the wet ingredients
  3. Combine both and mix well (the mix should be like a bread but quite a bit softer, add 1/4 cup of water to make it a softer mix
  4. place into a small bread tin and place into the oven on 180degrees for 25 minutes
