Ingredients
- 3 large apples (braeburn apples are good at this time of the year)
- 1/2 a cup of desiccated coconut
- 1/2 of a cup of liquid honey
- ¼ cup rolled oats
- 3/4 cup buckwheat flour
- 1/4 teaspoon of cinnamon (optional)
- 1/4 cup of raisins (optional)
- pinch of salt
Method
- In a good sized pot boil the sliced apples in 2/3 cup of water.
- Let them cook until soft.
- While the apples are cooking heat the oven to high heat
- Mix together all the dry ingredients
- Pour in the liquid honey (into the dry ingredients)
- Mix it in with your hands (like you do when making dough or pastry)
- Place the apples in the bottom of a medium sized oven tin, or tray
- Sprinkle the apples with raisins
- Pour the mixture of coconut and oats over the apples and press down
- Press the mixture down firmly on the apples
- Bake in the oven for about 10 minutes, on high heat, in middle of oven to keep the coconut from overcooking
Sauce
Optionally you can make a delicious sauce from cashew pieces blended with a large spoonful of honey and water and try pouring this over the hot apple crumble!
**Cashew sauce method:
- Wash 1/2 a cup of cashews in hot water and pat dry
- Soak the cashews for an hour in boiling water to soften
- Blend the cashews in the blender with 1/4 cup of water and a large spoonful of honey. A few drops of vanilla essence for extra deliciousness.
