Apple Crumble

Ingredients

  • 3 large apples (braeburn apples are good at this time of the year)
  • 1/2 a cup of desiccated coconut
  • 1/2 of a cup of liquid honey
  • ¼ cup rolled oats
  • 3/4 cup buckwheat flour
  • 1/4 teaspoon of cinnamon (optional)
  • 1/4 cup of raisins (optional)
  • pinch of salt

Method

  1. In a good sized pot boil the sliced apples in 2/3 cup of water.
  2. Let them cook until soft.
  3. While the apples are cooking heat the oven to high heat
  4. Mix together all the dry ingredients
  5. Pour in the liquid honey (into the dry ingredients)
  6. Mix it in with your hands (like you do when making dough or pastry)
  7. Place the apples in the bottom of a medium sized oven tin, or tray
  8. Sprinkle the apples with raisins
  9. Pour the mixture of coconut and oats over the apples and press down
  10. Press the mixture down firmly on the apples
  11. Bake in the oven for about 10 minutes, on high heat, in middle of oven to keep the coconut from overcooking

Sauce

Optionally you can make a delicious sauce from cashew pieces blended with a large spoonful of honey and water and try pouring this over the hot apple crumble!

**Cashew sauce method:

  • Wash 1/2 a cup of cashews in hot water and pat dry
  • Soak the cashews for an hour in boiling water to soften
  • Blend the cashews in the blender with 1/4 cup of water and a large spoonful of honey. A few drops of vanilla essence for extra deliciousness.
