Bean noodles

Ingredients

  • 80grams of Bean vermicelli
  • 1 red capsicum
  • a few chopped up chives (optional)
  • 2cm cubed of ginger (finely chopped)
  • 2 or 3 cloves of garlic
  • 3 teaspoons of soy sauce
  • 1 tsp black salt
  • 1 teaspoon of sesame oil
  • 1/4 cup of roasted sesame **

Method

  • Bring a pot of water to the boil
  • Add the noodles and boil for about 15 mins on a high heat (when ready the noodles should be soft and springy (if overcooked they will go mushy, if undercooked they'll be very chewy)
  • In a frying pan (over medium heat) add a teaspooon of toasted sesame oil
  • Add the capsicum, garlic, ginger and chives, stir fry them on medium heat
  • Blend the roasted sesame in a coffee grinder with a little salt to make sesame powder **
  • In a large bowl, mix the veggies with the noodles and black salt (mix in well)
  • Sprinkle with the sesame powder and more salt if needed
  • Serve warm

**Sesame Powder:
Put white hulled sesame seeds into a heavy based frypan, and heat fairly slowly. How you can tell when they are ready is when they get shiny (but before they start to change to a more golden colour), as this means that the oil is being released. Then blend into a powder. (A coffee grinder is good for grinding the sesame). It is quite important for this to happen, because otherwise the goodness from the sesame remains inaccessible in its skin and just passes through the body.
