What you need
- 1 cup of bulgur wheat
- 1/2 cup of chopped parsley
- 1 cup of chickpeas soaked in water for at least 12 hours
- 4 cloves garlic, minced
- 1 red onion, diced
- 1/2 of a cup of sesame seeds
- 1 tsp cumin seed powder or seeds
- 1 tsp each black salt and black pepper, plus more to taste
- 1 small lemon
Method
- Pour 2 cups of hot boiled water from the jug in a bowl with the bulgur wheat. The bulgur wheat will soak up all the water.
- In a food processor or blender, blend garlic, chickpea and sesame (which is best blended in coffee grinder first), cumin, salt and pepper, parsley, whole lemon etc. Some water may need to be added to this but keep it minimal just to mix.
- In a large mixing bowl mix the chickpea mixture with the bulgur wheat, then add the diced onion
- Shape into patties and bake on an oven tray on high heat for 20 mins
Sesame Powder:
Put sesame seeds into a fryingpan, and heat fairly slowly on a low heat
They will be ready when they start to be shiny (but not too long, they pop and burn quickly if heat is too high)
Then blend into a powder. (A coffee grinder is good for grinding the sesame).
