Buckwheat biscuits

Ingredients

  • 1 cup of buckwheat flour (put the buckwheat groats into a coffee grinder and grind up)
  • 2/3 cup of desiccated coconut
  • 2/3 cup of cashew powder (cashews ground up in coffee grinder - into a fine powder)
  • 1 pinch of salt
  • 1/2 to 2/3 a cup of liquid honey
  • optionally add cinnamon

Method

  1. Mix together all the dry ingredients
  2. Add in the liquid honey and mix in with your fingers until the mixture becomes crumbly but sticks together (you may need to add more honey)
  3. Roll into balls and press flat into cookie shapes (about 1cm thick) on an oven tray. You may like to use baking paper or just sprinkle some flour on the tray to stop the cookies sticking to the tray.
  4. Bake in the oven on a high heat (around 250 degrees Celcius) for 5 to 10 mins (they are very quick to cook, so helps to keep a close eye on them near the end.)
