Ingredients
- 1 cup of coconut
- 1 cup of roasted unsalted peanuts
- 1 cup of oats
- 1/2 cup of dates or raisins
- 1/2 a cup of sunflower or pumpkin seeds
- 1/4 cup of choc chips (optional)
- 1/2 tsp black salt
- 1/2 cup of honey
Method
- 1/ In the blender blend the peanuts and coconut into a powder then further blend until the mixture becomes a little oily like peanut butter
- 2/ blend the oats with dates or raisins quickly so they are roughly chopped, not too finely
- 3/ Blend the sunflower or pumpkin seeds
- 4/ Add all blended ingredients in a bowl with salt, choc chips and mix well together
- 5/ Add 1/2 a cup of honey, blend in and mix with your fingers like you would with pastry dough until everything is mixed in well
- 6/ Grease a medium sized baking dish with a few drops of sesame or peanut oil
- 7/ Add the mixture and using a flat glass press the mixture flat, it should be about 1cm thick and firmly pressed down
- 8/ Cut into slices (it's easier to do it before it gets cold)
- 9/ Put in the fridge for an hour or so to chill
- 10/ Serve with a spoonful of cocount yoghurt or just by itself.
