Peanut Balls

Before you start:

In a large oven tray, roast one large bag of peanuts. The peanuts should not be more than two deep in the oven tray in order for them to bake all the way through. The oven should be on around 100 degrees Celcius, or a very low heat for around 2.5 hours.

Ingredients:

  • 1 cup of roasted peanuts
  • 1/2 cup of pitted dates (chopped into quarters before blending)
  • 1/4 tsp of salt

Method:

  1. Blend the peanuts in a blender until the peanuts make a powder (in some blenders it's hard to blend all the peanuts into a powder - it's ok to have a few large chunky pieces - if your teeth are good) If you have a good food processor, suggest use this instead of the blender.
  2. Take half of the powder out of the blender and put all of the chopped dates and salt into the blender and mix with your hands and a wooden spoon until the peanut powder is covering all of the dates.
  3. Now that you have a crumbly mixture it's easier to blend into the dates .
  4. Put the blender on and blend dates adding the rest of the peanut mixture as you go.

Note: You will have to stop the blender and scrape the mixture off the side of the blender at times. In the end you should have a dough like mixture that you can roll into little balls and eat!

Make sure that there are no pips in the dates before you start
